700g Scotch fillet
25g of The 5th Season Red Duck Beer Salt
1 whole head of Garlic
50g Butter
25g of The 5th Season Black Pepper
Extra Virgin Olive Oil
1 Sprig of Rosemary
2 Sprigs of Thyme
For me this is the ultimate way to cook your steak and with many different methods out there you find your own and perfect it for yourself. Any way here is mine.
Step 1
Preheat your oven to 200°C. Meanwhile get your steak out of the fridge at least 20 min prior to cooking to bring to room temp.
Step 2
Place your frying pan over a high heat and add a dash of oil. On a plate apply a generous application of the Beer salt and freshly cracked pepper and roll and cover your steak in it. Add the steak to the pan and fry for 1- 2 minutes each side. Until a formation of colour appears, don’t forget to get the sides of the steak. In the same pan add the fresh thyme and rosemary sprigs, run your knife horizontally through the garlic head and apply to the pan. Toss in your butter and keep spooning the pan juices over the steak and turning it every min.
Step 3
Place the steak and whole pan into the preheated oven for 5 min till you reach your preferred cooking style. I like rare to medium rare. Remove the steak and rest covered with tin foil on a plate to rest for 5-10 minutes. Then it is ready to serve with your favourite sides or salad, season again with a fresh pinch or beer salt and pepper. Wash down with a Red duck beer of choice. Heaven on a plate.
